I just purchased the wordpress bundle package, registered my domain anindefinitenumberofchairs.com and then now want to set up a mail using this domain, like mail@anindefinite...
Now as far as I can understand the only way to do this is to use DNS, but I have never done that before and the support forums simple don't provide me with sufficient information.
So how can I use my own private server (paida.no)to recieve my wordpress mail. I don't want to use Gmail.

I'm not quite sure I understand what you're trying to accomplish.
Are you trying to have mails sent from your site (e.g. user registration confirmation emails, contact forms, etc.) sent to the existing address mail@anindefinitenumberofchairs.com, or are you actually trying to set up an email address for mail@anindefinitenumberofchairs.com?
If the former, you'll find that under the Settings tab, and/or in the settings for any mail plugins you may have installed.
If the latter, that's outside the scope of WordPress itself and has to be done through your host. Contact their customer support, and ask what steps you need to take to use a private server as your mail server.

it's the second case, I try to set up an email adress for mail@anindefinitenumberofchairs.com. Now normally I would do this through the control panel of my host, but like said I bought the wordpress bundle package, and as far as I know wordpress is my host?
Unless you're using WordPress.com, no... WordPress isn't your host. WordPress.org (where we are now) is for self-hosted installations and does not provide hosting services. If you're using software from WordPress.org, you would have to have signed up for hosting with another company.
If you're hosting on WordPress.com, you'll need to ask on their support forum.
If you're using wordpress.com you do this: http://en.support.wordpress.com/domain-mapping/google-apps-email/
Otherwise just make the email account in your host's control panel.
Either way, not a WordPress.org question.
