    How does one set the address to which the Contact Us form is forwarded?
    (the Contact Us page template - using Wootheme Spectrum)

    you need to ask on the woothemes forum - at the site where you bought the theme. As this functionality is not a part of core WordPress and it is a paid theme only people who have purchased it will have know how it is set up.
