boy, a link would be useful to see what you're talking about.
At a guess, sounds like you want to edit your theme's sidebar to remove the conditional statement(s).

On the very top of the page is says 'Posts filed under 'Day 1'' Is there anyway to remove that from every page?
Also, how do I bold the subtitles on the page? In this case, how do I bold 'Bula!!!'

1. Archives (be it by category or monthly) are displayed by the archive.php template file.
See http://codex.wordpress.org/Template_Hierarchy
Edit that file to remove whatever you don't like there.
2. The titles on the category archives view are logical in the original theme:
h1 - blog title
h2 - whole page title (=category name)
h3 - post title
[I know you compare it to your index page where not having a h2 page title > the post title will be in between h2 tags.
