how to remove jquery javascript from theme

hello this is my site

i want to remove the files

http://curriculumvitaeformato.org/wp-includes/js/jquery/jquery.js?ver=1.4.4

http://curriculumvitaeformato.org/wp-content/themes/simplex/includes/js/superfish.js?ver=3.1.4

because they are from menu bar, and i want to remove the menus cause im not using them.

the menus dont show cause i removed a line on the header, but i want the theme not to load this files anymore, anyone can help aprecciated.

and please tell me if the superfish.js is the only file that needs the jquery.js file to work on my theme. im very confused

im not good at programming, please tell me step by step.

i want to know:

1. where do i edit that to remove that javascript, and what code i need to delete?

2. if i remove that code my site wont go down, cause its only for the menu, and im not using a menu bar.?
