How to remove all custom gallery so I can use another plugin?

Hi. I’m loving this theme, great job.

I’d like to remove all the custom gallery and fancybox js thats baked in and just use Jetpack carousel, since it has mobile swipe and a slightly better UX.

I tried removing calls in the fuction.php and in footer script. However at that point, nothing is working within the gallery. It simply loads the image in a new window.

Any idea how I can remove this so another plugin will work?
