I've heard there's a way to make selected categories invisible (don't show up on your sidebar). Anyone know how to do that? Thank you guys.

That's the easy part...
Check out (by opening your sidebar.php) which template tag is used in your theme:
http://codex.wordpress.org/Template_Tags#Category_tags
and look for the "exclude" parameter in their description.
