I would like to limit my posts on the index page to just 1 post (most recent) I tried setting it in the preferences under settings>reading but setting that to 1 limits posts on archive pages to 1 which is not what I want. Is there a way to just limit the home page to 1 post?

Look at using the template tag, query_posts(), and the showposts= parameter. Or a plugin such as Cusom Query String Reloaded.
