How to display Sub Categories on a page as categories to more products?

Let’s say we create a sub category called “Acoustic Guitars” and put all our acoustic guitar products into that category . We then, from the main navigation create a parent category for “Guitars” and the Sub Category for “Acoustic Guitars” falls beneath that. Within that “Acoustic Guitars” category we have several Models that can be added as sub categories in Admin.

How to display just the Model Sub Categories on a page when “Acoustic Guitar” is clicked? Further we want to display the models as clickable Images on the page. Similar to this: http://www.espguitars.com/guitars
