i'm new to WordPress.
I've purchased a theme which allows a custom menu, and i've created a top level menu.
But I do not see any options for creating a sub-menu, i.e a drop down menu from the top level one. #
Maybe i've missed the option, thanks for any help.

Hopefully your theme is set up for dropdowns already.
So, to use them you can either make pages that are children/sub-pages to other pages, and they will appear undwer their parent
Or the better way, and hopefully your theme is set up for this since you paid for it
Go to appearance->menu from your admin area. You can make a new menu, and assign whatever you want to it. Parent items will be at the top, sub items will be in the dropdown

I'm using the Press 75 OnDemand theme, the default menu does have submenus.

Bit confused by this, sorry!. I already have one menu, called 'mainmenu', when I go to appearance->menu, it will allow me to create a second menu, say I call it 'sub-menu1', but there doesn't appear to be any options for specifying that mainmenu is the parent of submenu1

If your theme has custom menu feature than you go to appearance menu and add all the pages you want in menu from the box and than drag and arrange as you wish.
To make child of parent put child page under parent and drag slightly to right and if you have another page you wnat same parent then drag that under the other child.

Thanks very much for your help, that did the trick.
Is there any way I can put a category in as a submenu instead of a page, the drag and drop interface doesn't seem to allow that!
yes you can click on screen options in menu screen and you will see what you want to include on page select category and you will see a box with all categories select the one want in menu and than drag the the same way.
You can see how I have done on my website by clicking on my name.
