   I'm using Twenty Eleven and have made some changes before realizing the best thing to do is create a Child Theme. Firstly, how do I create a Child Theme? Secondly, will doing so delete plugins, uploaded files already used, etc?

   no it won't delete anything.

   Great, thanks. Now that I've done that, just to clarify, if I want to edit anything I should go to the parent theme stylesheet?

   No, if you want to edit any thing you have to go to the newly created child theme.
