An empty Text Widget in the sidebar widget area(s) may help with what you are trying to do. A link to your blog would be helpful, too.

just started it, and im very new to all this so any advice, tips is greatly appreciated
cais has the right answer. As soon as you add 1 widget to your sidebar via Admin/Appearance/Widgets, all of the default sidebar content should disappear. So then it's just a case of adding only the widgets you want in your sidebar.
thank you thank you....this is really tough at first. do you recommend a website of some sort to get trained better on this? I want it to look less like a blog and more like a website

is it better to download wordpress to my harddrive or just keep editing online?
When making changes to theme template files or stylesheets, I prefer to download a copy of the theme to my own machine, make the changes locally and then upload the amended files to the server. That way I can keep a backup copy of the theme locally in case anything goes pear-shaped.
