As the website developer, I naturally had to use my email as administrator. However, after giving my client admin privileges, I no longer wish to receive emails to moderate comments. How do I remove my e-mail or at least avoid the problem for future sites that I develop?

I do it by deleting my account after I've handed the site over. But, unless you are running a plugin that gives you more flexibility, you can change the email address at wp-admin->Settings->General five input fields down.
