How do I adjust these minor things in WP 3.1?

I recently upgraded to the newest version of WordPress and in doing so I’ve notice a few unwanted changes that I would prefer to remove, if possible.
There are links to screen shots below but here are the issues.
1. I run a membership site and when members login they end up starting out at a dashboard page with limited access. I’d prefer that like in the older version, that dashboard page not be available to members and that logging in simply takes them to the homepage.
2. There is now a nav bar (at least that’s what I think it’s called), on the top left hand side of my site once a person is logged in. I want to get rid of this if at all possible. And, there never used to be a “Site Admin” option in the “META” section in the lower right hand corner of the page for anyone other than myself – the only administrator.

Somebody helped me solve the nav bar issue but I still need help with the other stuff.
esmi – This is OK but I guess what i really want to do is get rid of that profile page all together.
As far as I know, that’s not possible.
esmi – the old version of wordpress didn’t have a profile page for any of my subscribes. That only came about when I installed 3.1.
WordPress has had a profiles page for as long as I can remember.
Ok, maybe it existed but my site never brought it up for any of my members until I upgraded to 3.1. Now if goes right to it when the login instead of going to the homepage like it should be.
They can also get into it from the site by going to the “Site Admin” link which was never an option for users until after the upgrade.
I really don’t even see what purpose this profile page serves.
Apparently you can do it through a .php file but that’s Greek to me. I have no idea what one even is or how to access it. This stuff seems so much more complex than it has to be.
