I would like to add all posts on Health under the Health page so when I click on Health at the top it lists all articles under it under the Health category. Is there a way for me to do this? If not, what is the next best thing?

WordPress does this sort of thing by default. Just ensure that you have your categories listed at the top of the page using something like wp_list_categories or the Categories widget.
