Have a unique posts page for each different category

Hi,
I’m currently building a site on localhost to be uploaded in a few weeks’ time. What I want to do is to have a ‘our people’ section, split out into ‘management’ and ‘consultants’. I’ve managed to use the Custom Content Types plugin to create a new type called ‘Staff’, with categories of ‘Management’ and ‘Consultants’. I want to create a custom page to show the profiles of staff, with their picture, contact details, bio, etc.
Similarly, I want to customise the layout of the News page, which would contain posts of type ‘news’ (funnily enough)
I’m using Customizr, but it doesn’t seem to use the same category page template as other themes. I really like the theme, it’s smart but also incredibly customisable, so I don’t want to switch!
Any help would be appreciated. I’m able to use PHP but there’s a lot more fiddly code than I can cope with and I’ve been struggling with this one issue for a while now.
