Once I've clicked "publish" on a page, is there a way for me to restore an older version of the same page? For example, I clicked publish yesterday and today realized I made a mistake.

You can revert to an older version of a Post or Page using the Revisions pane in Edit Post or Edit Page. If you do not see this pane, click Screen Options at the top of the Edit page and ensure that Revisions is checked.
