I have put my banner image across http://www.petiteanglaise.com and applied the changes advised in the header tutorial (although the template is gemini) but my original text remains and I can't get rid of it. Could someone take a look at my template and tell me what needs changing?
I do want the whole image block to act as a link.
Thank you in advance for your help...

Take the text-align:right out of h1 - that will remove it.

To make the whole image clickable - and not just the top edge - change #masthead to #header, then, to get rid of the white line at the top (if you want to) make 'margin-top' in #rap 0px or just get rid of that line.
