Is there a way to make this plugin send email with submitted email address in the From field (so I can just click on reply instead to copy/paste email address in order to reply back)?

Hi,

That feature isn’t available in the current version of the plugin, we plan to add it in the next update at least with the reply-to header.

In the meantime you may find useful this similar plugin that has a visually configurable setting for that feature:
