French version but English version is work fine If I modify the define variable by:
define(‘WPLANG’, ‘en_EN’);

My theme display “older entries” and “never entries” Instead of ‘nouveau billets” “anciens billets” and settings theme is in english, fr_FR.po and fr_FR.mo are very present in the languages directory theme, my dashboard is work fine in french.

So this could very well be an override of the Theme for these bits of text.
It sounds very much as described on this page:

Your Theme may need to have the translation ‘completed’.
Have you tried here for help with French Translations of Themes?

I verified and to “older entries” and “never entries” are translated well in the French file theme

Hi Markco,
It is very possible that the Theme itself is overidding those bits of text and ‘insisting’ on what should appear.
Have you tried the Theme author’s Support Forum?
You can try and contact him via the Theme page http://wordpress.org/themes/evolve
