Force a 'More' tag

The site I’m working on is mainly set up as ‘post to page’ and I need to get one or two pages to force a ‘more’ tag into the posts so that I don’t get a list of posts a mile long.
I can fumble my way through simple code sometimes so some fixes I might have found go straight over my head – is there a way an extreme novice can make this work?
