When you're ceating/editing your posts, look in the top right-hand area for 'Screen Options'. Click that and a menu will drop down. On that menu, click the box for 'Author' and close that menu. This will give you another area in the editing page that lets you choose which user the post is assigned to.

If you want to get rid of the name showing completely the best way is to edit your themes template files (using a child theme of course) and remove the areas that display the authors name.

I would also like to point out that having your name or even username of your posts won't help people hack your site that much - as long as you have a password that's reasonably secure.

Yes. You will need to edit your template file/files and remove whatever function calls are printing that information out. Where that is and how it's called and output changes from theme to theme, so it's not going to be easy for anyone to tell you exactly where it is. The best hint that I can give is to look for something like the_author() in a few of your template files. The ones that are most likely to have this are content.php, single.php and index.php but as I said before this coudl be in amny different template files and it could be in almost any template file that I haven't mentioned here.

This doesn't remove the authors pages altogehter though. I haven't found a way to do that yet. All it does is hide the links to them.
