I have a page with the shortcode to list my subpages (of products), but they are still showing in alphabetical order instead of the page numbers I assigned.
Is there something else I'm supposed to tinker with?

If I understand you - you want the list to be sorted by page order? I don't think I've included that as yet - so I'll look at adding it!

I must've mistunderstood Order under Attributes in the admin or assumed it was connected w/ the shortcode...

It is definitely available for eshop_list_subpages
