I have tested latest plugin Ver 2.7.1 recently.
All notifications are going with correct appointment information (correct date and timing) on booking and on approve/cancel.
And all appointment dates and timing correctly appearing at both client and admin dashboard side and manage appointment menu page.
Please share your site URL?
Have you tried to made any changes in code regarding date or time formatting?
Because this only thing to break this.

I don’t remind having made changes in the code regarding time formatting.
One change I did though was to hide the service option, as described in thie post http://wordpress.org/support/topic/remove-service-option?replies=4
I will try to set the service option back to see if it solves the problem.

I did set back the “Service” option and it seems to solve the problem. I also noticed that when “services” disabled, the hours available are not the same as when enabled (for the same day).
Where can I send you screenshots and the demo url? I want to keep it private because it’s in development stage.

Ok I found it, I had to change the value to “2” in the hidden field to match my default service
<input name=”service” id=”service” type=”hidden” readonly=”” value=”2″/>
But while testing this, I noticed the appointments are displaying in the calendar even when they aren’t approved yet, and still shows after cancelling them. But I’ll look around in the forum if this problem has already been discussed.
