How do you get wordpress to check the email account that you setup. I sent an email and its just sitting in the account and I can't figure out how wordpress knows to check for the email. Is it a chron thing or a setting I missed?

Here's the Codex Article on "blog by email": http://codex.wordpress.org/Blog_by_Email
Essentially, you need something to "activate" the blog after you email (Step 3 in the above article).
