Unfortunately no functionality like what you describe is currently provided in Document Gallery. I believe it has been proposed before and it may make it into a future release.
A not-so-elegant work-around might be to use custom taxonomies to group all of your filetypes. You would need to manually assign each attachment to a filetype, but doing this assignment would allow your galleries to dynamically expand as more of each filetype taxon is added. You can see more information on use of custom taxonomies in Document Gallery on the installation page.

I just wanted to let you know that I’ve just published a beta version of Document Gallery 3.0, which contains this functionality (among a number of other changes). If you’re interested in trying it out, the beta version can be downloaded here: https://downloads.wordpress.org/plugin/document-gallery.3.0.0-beta.zip
To create a gallery with only certain filetypes, simply set the mime_types
attribute to a comma-delimited list of the types you want included. For example, use [dg mime_types=application/pdf]
