Disabling Dates After They Have Been Selected A Few Times

Okay, so here is what I want to do:
I have a form on my website for submissions, but I only post 3 submissions each day (they select the day they want via the datepicker).
I get 20-odd submissions for each day, and what I would like to be able to have happen is that after 3-5 people have selected that date and submitted the form, the date is no longer able to be selected.
Is there a way to do this? And please explain it in detail as I am not familiar with CSS and jQuery and stuff.
