   I would like the stats that JetPack added to my WordPress.org account from our old sites and test sites so I may get more accurate readings.

   I am afraid you cannot currently merge Stats from different sites. You'll need to access all your old stats through the dropdown on WordPress.com home page:
   http://wordpress.com/#!/my-stats/

   I meant to completely delete the stats on my account.

   I am afraid I may not be able to help you with this. To reset your site stats, you'd need to change your site URL.

   You can try changing your site URL, and then go to the Jetpack menu and disconnect from WordPress.com. Once you have done so, change your site URL back, and then reconnect to WordPress.com in the Jetpack menu.
