I uninstalled the statpress plugin some time ago, but have realized the (huge) database table is still there - can I simply delete the statpress table via phpmyadmin without effecting any of the other data / tables?
Really appreciate any guidance.

Use Plugins Garbage Collector to easily delete statpress tables, You don't need phpmyadmin ;)
