My clients events all start at 9am, how do i change the system so that the default option (if no time is set it currently defaults to 12:00) if nothing is selected is 09:00?

I assume it’s just re-arranging the file that contains the options for the time dropdown but i do not know where to find this file in the plugin documents.

If the admin dashboard, you’d do it in this sort of fashion – http://wptheming.com/2010/08/custom-metabox-for-post-type/

If front-side, you’d need to edit templates/forms/event-editor.php and copy that over to yourthemefolder/plugins/events-manager/forms/

The “Event starts at” would be located in templates/forms/event/ in the filenames containing ‘when’ (last 3)

actually, the above is wrong, you should be able to edit the default start time in

templates/forms/event/when.php

that is used both front and backside

another way would be to hook into em_get_post filter, called in classes/em-events.php and then modify the $EM_Event->event_start_time/event_end_time properties depending if anything was submitted via $_POST
