Default categories for new MU sites.

I have a site that i created for a school. I’ve recently converted it over to a Network site so that each teacher can have their own blog and can customize there site a bit. I would like to be able to create a new site and have that site already have “homework”, “announcements” as categories already there. and also have the the theme i created for it selected.

Any advice would be awesome! thanks!
