Custom Fields not showing if beginning with underscore value

This is intended behaviour. Custom fields prefixed with an underscore are treated as “hidden fields”. You can show these fields in the custom field dropdown by ticking the “Show hidden custom fields” checkbox in the Admin Columns settings screen.
