If Contact Form 7 is not delivering your email even though it says it sent it successfully, you probably need to configure WordPress for SMTP email delivery.
I found this blog post and recommendation to use the Configure-SMTP plugin to be helpful.
It's a shame that Contact Form 7 just assumes wp_mail is configured correctly.
