Does anyone know how you could configure what is checked under screen options per user or role? Without having to log into their account.. Maybe this is just cached in the browser, so it may not even be possible...

Use the More Fields plugin:
http://wordpress.org/extend/plugins/more-fields/8.Set global visiblity of boxes, in addition to the 'Screen Options' available for each post type for each user.
