I'm looking to change the widge of my wordpress website. I currently use the default theme just with different colours. I know how to change my image sizes etc. but wasn't so sure which parts of which theme files I would have to change in order for the entire site to adapt to the new width I want?

Search for 760 in your stylesheet. But remember, you have to change the images, too.

There are two 760s in the stylesheet, one for the page and one for the footer. Is that all that needs adjusted? Will the sidebar and the width of the posts automatically change to fit with the new size?

Maybe.... hard to say with the default theme. Changing anything about it is a right PITA.
