I was wondering if I could change the slug of future posts. I have a default slug as of now but want to change it to a custom slug. I'm afraid that when I do this it will also change all my old slugs to the custom version. Any suggestions?

Are you trying to change the slug, or the permalink structure? These are two entirely different things.

I thought the slug was @ the end of the permalink? Pretty much what I want to do is the permalink is "default" p=8192 or something. I want to change that to show category/subcategory/title > but I only want to change it on future posts not the ones that are currently live. Can that be done?

No. At least, not feasibly. The permalink structure is a global setting.
