I need to have wordpress passwords in sha-512 (or at least plain md5) in order to be able to authenticate users from other applications (dovecot, openfire) with wordpress credentials. Any help would be appretiated.

wp_hash_password() and related functions are defined in wp-includes/pluggable.php around line 1410. As pluggable functions, you can just redefine them in a theme functions.php or in a plugin file and your version will be used instead.

By default WordPress hashes passwords with 8 passes of MD5.
