I've been reading tutorials on the web about creating templates for categories but none of the methods seem to work for me I must be doing something incorrectly.
What Im trying to achieve is to style my posts or my categories so I can have different sized images that come with feeds.. unless there is a better way to do that?

The editor in wordpress allows you to upload images to posts and resize them by editing the image after you place it.
If you think you need to actually use different templates try:

and for category templates try:
