   For the next version of Word Press or future versions, it would be of real benefit if we could manually categorize our categories according to how we like, instead of the default based on order of alpahbet setting. In the meantime, does anyone know how I can change my category order?

   That's already an easy change, but I agree that it would be much easier from the admin panel. Here's the codex page for the tag wp_list_cats:

   Edit: If you're real anal retentive, you can manually link to each category, but that would take up a lot of your time, and it wouldn't change when you add/delete categories.
