I have several variable products and it's always my "singular" variation price thats showing on the site. How can I change in a product so that for example a "m2" variation price is shown as default instead of the singular variation price? In my general tab I can only see the sku field.

With variations, the product page should show "From: $XXXX" where XXXX is the lowest variation price. If you're not seeing that then it could be that your theme code isn't designed correctly.

If you want to display a specific variation price then you need to write some code that looks up the product, gets the product children, and finds the proper price for the desired child product. ( variations are children of the parent product )
