Hi,
Well, my database randomly went down, and now I can't save the custom templates to the pages. Like they show up in the drop-down, I'll click on them, and I'll click update page, and they'll switch back to the default template instead of going to the new template. I can change the page order and anything else, but not this.
Help?

There could be an extension called "Suhosin" limiting the number of variables that could be registered through a POST request (read: http://www.hardened-php.net/suhosin/configuration.html#suhosin.post.max_vars)
After I increase some values, I could post without any problem...

I am having this same very annoying problem, but have neither Suhosin nor access to my php.ini file (we're hosted by Yahoo). This started seemingly out of the blue -- perhaps after I installed a statcounter and calendar plugin. Both have been disabled and deleted and the problem persists. I can see all my custom templates in the dropdown menu for my pages, but WordPress won't keep the changes after I apply.

Hi all, I was having the same problem and found the error was on my part. While creating the page template I must have copied the /* Template Name: */ portion and added it to index.php.. I guess just double-check that all your .php pages have the correct code for /* Template Name: */
