Cannot edit join date

Unless you are talking about WP’s user_registered field, that’s not a field that comes from WP-Members (unless you added it as a custom field). If you are talking about user_registered, that’s not an editable field. Unless you write something to hook into the admin panel, you would need to edit in the database.
