I've seen some posts about allowing users to switch styles, BUT that is not what I want. What I would like to do is use 2 different templates, one for the pages I create with WP and one for the posts. Is there anyway to do that?

http://wordpress.org/support/topic.php?id=27073 is EXACTLY what you want for two posts. But check the PAGES article mentioned above and it will take you through the process for Pages templates.
Well, it's not EXACTLY what the OP asked. The question was not about 2 single templates, but about ---
1 template for posts
1 template for Pages
So, Lorelle, while your link is useful in itself, doesn't answer the original question. Let's not mislead people :)
The answer is yes regardless. The posts will default to whatever the theme says. For pages associate a new template.
