This may sound dumb, but I am quite new at self hosting.
I would like to have a 'sub blog' type of thing, where as instead of just another page on the blog, it would be a fully functioning posts page same as the main blog. I read here that you can't on wp.COM, but you can on self hosted, so, is this possible?

I've just been working with tugbucket on this. I think what I am trying to do is the same as what you are trying to do so you might like to have a look at this post. You can see from the number of posts it's taken to get there that I'm new to this as well.
I have seperated his instructions in to steps. If this looks like what you need let me know and I can copy and paste it here so you don't need to fiddle around with my mistakes and revisions.
If you look at my web page, the Photo Album page is the one we have made. It is a page, with pages.

I read through some of your post and I think it might be what I'm looking to do. From what I read, it sounded like any posts you entered into the new 'sub blog' would also appear on the main page, is that so? If so, is there a way we can have that not happen?

NO we have it sorted so that the "sub-blog" posts don't show up on my normal web page.
On my blog I have my home page, and thats where I wanted to do my daily posts and what not. My every day blogging.
Then we created the Photo Album page where I can have multiple posts that people can scroll through.
I wanted it set up to that when people came to discoverboo.com they were directed to my home page. And IF they wanted to look at the photo's they could look through them on a seperate page.
So I think the asnwer to your question is yes, it can be done. The sub-blog posts will be put under your catagory (Photo Album in my case) and those posts will only show up on that page.
