When accessing posts from the admin menu I've discovered that I can add a category to multiple posts but I can't remove the default which is a real drag as I have hundreds of imported posts that have ended up in the wrong category and the only way to change them is one at a time!
Could the bulk change option default so that it has no category? (does this make sense?)

Yeah, it makes sense but alas it doesn't work right :/ it's been tried before. There may be some plugins that do it, but I have this memory that when it was tried, it would remove any cats you didn't list, which wasn't optimum either, for when you just want to add a new cat to the extant list.

I've found a workaround, well kindof and you have to do it one page of posts at a time, so for example, I've imported 900+ posts all videos but the category name is different (shoulda thought of matching it before! Duh), that I want to add to Videos, so using the bulk edit option I work through the posts until all have been added to the Video Cat and then delete the imported video category.
I tried it out on another duplicate imported category of just a few posts first to see if it would work.
I've searched high and lo for a plugin that would enable global search/replace but it don't exist.
When you have thousands of posts, managing them needs a powerful DB editor.
Anytime you're at a thousand posts and need to restructure, it's going to be a PITA, though, since you will have to look at and review each post anyway to make sure you're right :/
You can rename categories, though, and that may be an option. It really depends on the situation.
