Best methods to create directory using WP? Pages? Posts?

    I’ve got a client who has a directory of restaurants, shops, movieplexes, etc. currently using Moveable Type. I want to switch him over to WP for all of the flexibility WP offers. Here’s my question. For each establishment, would it make sense to make them all posts or pages. Or could I set up a page for each category and then place the posts inside of that page? I would need it set up for categories as well as alphabetically as well. So it would need to be listed as A,B,C…. as well as restaurants, shops, etc.

    Make them posts, pages can’t be categorized. If assigned to a category, the posts will be automatically added to that category’s page(s). You can also use subcategories to further refine your categorization.
