This page of the codex says when using phpMyAdmin to backup, check the "complete inserts" box and to check the box for "use hexidecimal for binary fields":
    http://codex.wordpress.org/WordPress_Backups#Backing_Up_Your_WordPress_Site

This codex page says to not check either box:
    http://codex.wordpress.org/Backing_Up_Your_Database

    Which is correct?

All friends and clients were able to follow this instruction which has also been included in Codex.

I guess both could be correct - depending on your server's settings.

The following is not intended to be an excuse for providing contradictory instructions in the Codex but, please, be aware that the Codex is a community effort compiled by tens if not hundreds of contributors, and their experience and/or server settings may be drastically different.

I can also second mercime's opinion: that tutorial always worked for me, too. The only things I make sure before a backup: to have checked both data and structure and to have it saved as a file (to be able to manipulate and/or easily save on my HD).
