I'll change my hosting account and so I need to backup all my data. How can I do it so that when I move to another hoster, I just put my files over there?

Will it just backup all the posts and plugins, etc? Will I have to just upload the files to new database?

Here is the Codex article on Moving WordPress.

There are many ways of backing up a WP site. Search the WP Plugin Directory to find plugins that will back up your site.

Since the directory structure may be different from one hosting service to another, just copying the database might leave some references pointing to the old site. I have used the WP Migrate DB plugin with good results to move the DB. Your files must be moved separately.
