I want to change sending out email server but wordpress does not support SMTP by default (there are a few plugins). Any reason for that?

Only that WordPress uses the inbuilt PHP mailer.

    Sorry? Can you elaborate?

  5. WP uses wp_mail. wp_mail calls phpmailer

HOWEVER it's filterable. PHPMailer is small and flexible, since you can just change wp_mail to do what you need. It works for most servers and hosts too :)

sorry for this silly question, so finally is there anyway to change mail server without a SMTP plugin?

  7. No, but that's by intent for pretty much any function. The entire point of having things been filterable and hookable is so YOU can change it easily :)
