Advice on amenities functionality and setup

I have been asked by a client to create an amenities search for a host of lodging options (includes lodging categories of resorts, campgrounds, hotels/motels, and private homes). Each of these categories has a variety of different amenities options including pets allowed, wifi available, pool, etc.

What is the best way to set something like this up in WordPress? Is there a plugin? Should I used Custom Taxonomies? Convert these to tags? I know I will definitely be using Custom Field Templates for users to check the amenities when logged into the system, but I’m not sure beyond that how to handle the information. What is the best practice with the way WordPress is growing?
