Hello, I'm new to WordPress and havent selected my theme yet. I'm just wondering out of all the themes that are available for me to choose from, can you ad adsense to every one of them or only the ones that specifically say "adsense ready" in their description. Please advise.

No, you are free to edit any theme in the Theme Directory to include AdSense or anything else.
The ones that say "AdSense ready" have just been built with advertising in mind, so the header, sidebar, or other areas are probably sized to accommodate popular ad sizes.
So some themes like this might be easier to insert ads into than others, but other than that, you have complete freedom!
